Food Memories
When I sat at the family table to eat, childhood memories came to me with flickers of generational past. I wonder if food does it to everyone. Dishes that I grew up with, recipes that grandmother used, and the aroma of certain foods evoked powerful memories. Such feelings I experienced the last time I made Persian Kebab for lunch. Kebabs are sliced meat and vegetables cooked on a grill or in the oven. Since there are various names for Kebabs, they can be cooked in many ways. However, grandmother Miriam had a unique way of preparing the dish, which still evokes memories of love.
When grandmother died, I felt the loss. I mourned knowing that she went along with her touch of love through food. She was practical and very pleasant while making Kebab. Every step in her recipe had a purpose. She told me that good food satisfies three aspects of the human being. They include the body, soul and mind. As a result, she made sure that the food was healthy, aromatic, and delicious.
While playing outside her home, the aroma of drained onion drew me to grandmother’s kitchen. It was her first step in preparing the dish. I sat beside her, watching the skillful art of making Kebab, which she had mastered and perfected over the years. She took her time to mix a variety of natural ingredients for her cooking formula. Even though I hardly remember some of the ingredients, I never missed meat, eggs, garlic, bread crumbs and paprika in her cooking table. She skillfully divided meat mixture evenly into eight cylindrical pieces, which she put into 8 large metal skewers. The skewer molds and flattens the meat around it to produce about eight-inch pieces. During this time, I prepared the charcoal grill to heat the skewed pieces, after which the grandmother brushed the kebabs with saffron butter and placed them over the grill. Afterwards, she turned them skillfully until they were golden brown, and later sprinkled with a little sumac. When I was around, I loved the Kebabs served with steamed rice since it is the favorite dish in the family.
Even though I had much experience in the process while cooking with the grandmother, she still remains the professional in making family Kebabs. Since her death, memories of love through food keep me in touch with her. The smell of rose water and saffron, the scent of juniper bushes, steamed Basmati rice, and hyacinths provide comfort when I remember her. Even today, I still embrace the culture, and I will pass it to the next generation.
